Easy, quick, "Pickled" Beets

 

Love the flavour of pickled beets but don't want to buy them?

Kids Naturally shows you how you can make them yourself

at home, in just 15 minutes!

They're delicious on their own, or can be added to salads

or sandwiches for that delicious pickled flavour

that is also super healthy!

Beets are high in immune-boosting vitamin C,

fibre, and essential minerals like potassium and manganese.

Ingredients

  • beets, cut into 1" cubes

  • water and apple cider vinegar (half of each) to cover beets 

  • 1/2 tsp. of allspice

  • 1/4 tsp. of nutmeg

  • 1/2 tsp. of salt

 

Instructions

  • Put all ingredients in a small pot and bring to a boil

  • Once it's boiling, bring temperature down to a simmer and mix occasionally

  • Cook for 10-12 minutes until fork-tender

  • Discard juice and enjoy!

  • May be refrigerated for a week in a glass jar or bowl with a lid
