Easy, quick, "Pickled" Beets
Love the flavour of pickled beets but don't want to buy them?

They're delicious on their own, or can be added to salads
or sandwiches for that delicious pickled flavour
that is also super healthy!
Beets are high in immune-boosting vitamin C,
fibre, and essential minerals like potassium and manganese.
beets, cut into 1" cubes
water and apple cider vinegar (half of each) to cover beets
1/2 tsp. of allspice
1/4 tsp. of nutmeg
1/2 tsp. of salt
Put all ingredients in a small pot and bring to a boil
Once it's boiling, bring temperature down to a simmer and mix occasionally
Cook for 10-12 minutes until fork-tender
Discard juice and enjoy!
May be refrigerated for a week in a glass jar or bowl with a lid
