Easy, gluten-free crepes:

For sweet OR savoury stuffs!

You'll be passing this Raising Kids crepe recipe around to your friends and family, because it's just SO EASY and delicious... and gluten free, so they won't stick to your stomach like a ball of gum. THEY'RE AWESOME!
These crepes use just a few ingredients and can be stuffed either with a sweet filling like jam or fresh fruit, or can be enjoyed for dinner with taco meat, or savoury tofu stuffing. Enjoy!

Ingredients: (makes about 18 crepes, 7" diameter)
  • 1 Cup brown rice flour
  • 1/4 tsp. salt
  • 2 eggs
  • 1 Cup milk, or milk substitute
  • 1 Tbsp. melted butter or butter substitute
Here's how:
Beat all ingredients together in a bowl, until smooth and lump-free. 
Heat a medium-sized pan, to medium temperature, then grease just a touch with oil or butter (only needed for the first one).
Using a 1/4 Cup measuring spoon, pour the mixture into the pan and distribute to shape like circles.
When crepe starts to lift around edges and bubble in the middle (about 30 seconds) then flip to other side.
Work in batches of two (2 different pans) to make them real quick. 
TIP: for a sweet crepe, try adding vanilla extract and some lemon or orange rind.
