No-Bake Energy Balls
Replace those expensive energy bars with a home-made, healthy alternative. Packed with protein and so easy to make you could almost give the chore away to your kids!
1 Cup oatmeal
1/2 Cup natural peanut, cashew or almond butter (We used almond butter)
1/2 Cup ground flaxseed, OR 1/4 Cup ground almonds
1/3 Cup honey
1 tsp. vanilla extract
grated coconut for rolling
Mix all ingredients in a large bowl. Form into small balls (about 1” diameter) using a spoon and place on a plate covered with parchment paper and a layer of grated coconut. Refrigerate slightly to compress all ingredients together.
