Refreshing Quinoa Salad

 

This salad can be eaten as a meal! 

Don't feel like cooking? Make the night before!

Great for kids' lunch bags, crunchy and tangy.

Ingredients

  • 1 C. Quinoa (white or red)

  • 1/3 C. hulled, unsalted sunflower seeds

  • 1/3 C. toasted pumpkin seeds

  • 1/2 small onion, julienned

  • 1 bunch radishes, julienned

  • 1 red pepper, julienned

  • 1 large carrot, grated

  • 1/4 C. dried cranberries, unsweetened (or pomegranates)

  • 1/4 C. lime juice

  • 1/4 C. lemon juice

  • 1 C. cilantro, chopped

  • 1 jalapeño pepper, diced (optional… some like it hot!)


Method:
In a small pot add 1-1/2 C. water and bring to a boil. Add Quinoa and boil until water is absorbed (approx. 5-7 minutes). Set aside to cool.


Combine all ingredients in a bowl and mix well. Refrigerate for 30 minutes and enjoy!
