Sugar-free, Pectin-free,

super YUMMY jam!

Got a craving for something sweet? This recipe can be made using any type of fruit – our favourite: strawberry. Or raspberry. Or wait, maybe blueberry... or all combined!

Conventional store-bought jams use pectin, which is what makes jam "jelly up" and thicken. But pectin needs a LOT of sweetner in order to work... yech...

So we substituted the pectin and used Chia seeds instead! It's a must try recipe. And amazing on toast, crackers, ice cream or even on its own as a sweet-tooth satisfier!

 

 

 

Ingredients:
• 4 Cups quartered strawberries

• grated rind of 1 lime, juice of 1/2 lime

• 2 Tbsp honey

• 1 heaping Tbsp Chia seeds

 

Method:

Place strawberries in a small pot on medium-low heat and stir occasionally until fruit has become mushy (approx. 5 minutes). Add lime rind and juice, then mash using a potato masher til desired consistency. Add honey and Chia seeds and simmer for another minute.

 

Remove from heat and allow to sit for another 2 minutes until slightly cooled. Place jam in Mason jars or glass bowl, uncovered, until almost cool. Cover and refrigerate as usual – will keep for about 10 days.


 

Yield: About 4 small Mason jars (great as a gift idea!) You can get Mason jars at the Dollar store or bulk store.
