Watermelon Salad

Watermelon is high in Lycopene, especially important for cardiovascular and bone health. And it even has protein!

Simply delicious and refreshing. And not just for summer!



Maple Balsamic Dressing:

  •  1/4 cup olive oil

  • 2 tbsp balsamic vinegar

  • 1/4 cup pure organic maple syrup

  • 2 tbsp dijon mustard

  • 1 clove fresh garlic minced

  • 1 tbsp shallots chopped fine chopped

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper 


  • 8 cups thick-cut watermelon

  • 2 cups baby arugula 

  • 1 cup cucumber, sliced 

  • 1/2 cup thin sliced red onion

  • 3/4 cup (3oz) feta cheese, crumbled

  • 1/2 cup chopped toasted pecans

Combine all salad dressing ingredients in a mason jar and shake well.

Combine all salad ingredients in a bowl with desired amount of salad dressing and finish with cracked black pepper.
